Gooseberry Recipes

Gooseberry Fool No 1

3½ Cups Gooseberries
½   Cup Sugar
Cook until gooseberries are soft and skins burst (approximately 10 mins in microwave.)  Leave until almost cold.

300ml milk  
2 tablespoons Custard Powder
mix together in microwave safe jug

Microwave on high until thick and creamy. Approximately 3 mins stirring well or whisking very minute. Leave to cool a little.

Slowly fold gooseberries into custard. Pour into Sundae dishes, top with cream and grated chocolate. 

(If you have trouble with this recipe curdling a pinch of Baking Soda will help.)

 

Gooseberry Fool No 2

3½ Cups Gooseberries
½   Cup Sugar
Cook until gooseberries are soft and skins burst (approximately 10 mins in microwave.)  Leave until cold.

300ml cream whipped
Fold gooseberries into cream - Pour into sundae dishes

Alternatively put half cream and half yohgurt (vanilla or hazel nut work well)

 

Gooseberry Pie:

Cook Gooseberries as above. Thicken with cornflour.  Gooseberry mixture needs to be quite thick. Leave to go cold.

Either use your favourite home made pastry OR purchase a Sweet Short Pastry (we find Ernest Adams Buttercrust to be the best)
Line your Pie dish with pastry, add gooseberries, and top with pastry. Alternatively a meringue topping makes a lovely change. 

 

Gooseberry Crumble:

Cook Gooseberries as above thicken a little. Put into oven dish.

Mix together:
1 cup Flour        Wholemeal flour can be used
½ teaspoon Baking Powder
½ cup sugar 

Rub or cut in 
30grms butter
Coconut can also be added if desired.

Spread over Gooseberries.

Bake 200ºC until golden approx 20mins.

 

Gooseberry Muffins:

4 Cups Flour
8tsp Baking Powder
½ cup Sugar
150gm Butter - melted
2 Eggs – whisk with fork
½ c Milk
Small Packet Cream Cheese    -   cut into approximately 30 little cubes 
2½ cups Gooseberries 

Cook gooseberries with ½ cup sugar- 7-10 mins in microwave until gooseberries are soft some burst and some still whole.

Put dry ingredients into bowl.
Add butter eggs and milk.
Add Cooked Gooseberries
Mix with Knife – do not over mix
Put one cream cheese cube in middle of each muffin, then another cube of cream cheese on the top of the muffin.

Makes 15 muffins

Bake at 180ºC  for 20 minutes+
