Gooseberry Fool

Ingredients:

  • 2 cups of Mamaku Blue top grade frozen gooseberries
  • 3 Tbspns sugar
  • 250ml cream
  • 1 cup yoghurt
  • 1 Tbspn icing sugar
  • 1 tsp vanilla essence
  • 1tsp of Mamaku Blue Gooseberry Liqueur (or to taste) (optional)
  • ½ cup white chocolate chips 
  • For decorating: lemon, sugar, white chocolate chips, fresh mint

Method:

  1. Heat frozen gooseberries with sugar in a saucepan. Stir over low heat until fruit is soft and sugar dissolved.
  2. Remove from heat and stir, break up large gooseberries to a rough puree texture. Allow to cool completely.
  3. Whip cream with icing sugar and vanilla essence and Gooseberry Liqueur (optional), until soft peaks.
  4. Fold in yoghurt.
  5. Fold through cold fruit gooseberry puree gently into the cream and yoghurt mixture.
  6. Add chocolate chips, fold into mixture.
  7. Moisten top and outer lip of martini glasses with a wedge of lemon. Dip the rim of each glass in sugar. Spoon fool mixture gently into serving glasses. Garnish with a sprinkle of chocolate chips and a mint leaf. Best to refrigerate for 1 hour before serving.
